Easy Seeni Sambol

Onions cooked with chilies and masi - A flavorful Sri Lankan dish that is served with aapams, rotis , idiappams etc. This sambol is both spicy and sweet.

Ingredients:

5 medium onions thinly sliced
1 – 2 tsps masi or Maldivian fish powdered
4 curry leaves
2 cloves
2 cardamoms
1 tsp chili powder
2 green chilies
1 tsp sugar (add more or less according to taste)
1 /4 cup oil
salt to taste


Preparation:

  • Heat oil in a pan.
  • Add in the curry leaves and masi powder and fry .(make sure that the oil is not too hot)
  • Add the onions with a bit of salt and fry over medium heat.
  • Add the whole spices, chili powder and green chilies.
  • Mix well ,cover and let it simmer till the onions are soft and caramelized (takes 30 –45 mins)
  • In the end add the sugar or ‘seeni’.Mix well and serve.
  • Enjoy with aapam,idiappam or anything else you can think of.




Tips:

1. Increase or decrease chili powder & chiles as per your taste.
