Pad Thai - Stir fried rice noodles

Delicious stir fried rice noodles with egg,tofu,sprouts and meat – garnished with chopped roasted peanuts and coriander.Definitely one of the best known Thai dishes.

Ingredients:

8 oz flat rice noodles/sticks

1/2 cup tofu cut into thin strips

1 tsp chopped red chilies

2 tbsps oil

3 cloves garlic chopped

5 oz thinly sliced chicken

4 oz Prawn

1 cup bean sprouts

1 tbsp chooped coriander leaves( cilantro)

2 eggs beaten

1/4 cup chopped roasted peanuts

For Sauce:

2 tbsps fish sauce

2 tbsps lime juice

2 tsps brown sugar

Preparation:

  • Cook rice noodles as per instructions till soft.
  • Mix ingredients for sauce and set aside.
  • Heat oil in a wok or frying pan.
  • Add the garlic,chilies and chicken and stir fry for 3 mins.
  • Add the tofu, fry and move to one side of the wok.
  • Add the prawn and cook a couple of mins then move it to the side.
  • Add some more oil and scramble the eggs.
  • Now add the cooked rice noodles.
  • Pour in the sauce mixture and mix all the ingredients set to the side of the wok together.
  • Sprinkle with bean sprouts,coriander and peanuts.
  • Your one dish pad thai is ready to enjoy!

Tips:

1.Instead of prawn,chicken and tofu use just chicken and tofu OR any other combination you like.

2.If desired - Add in any vegetable you prefer like carrots,Chinese cabbage etc.
