Chicken with Lychees

A quick stir fry dish that combines two delicious ingredients - chicken and lychees.

 
Ingredients:
 
3 boneless chicken breasts cuts into bite size pieces
corn flour
1 / 4 cup oil
1 red pepper chopped
5 spring onions / shallots (green portion cut 1 inch long)
1 /2 cup water
2 chicken stock cubes
1 / 4 cup tomato sauce
1 tsp sugar
425 gms lychee can – drained
1 tsp corn flour
 
Preparation:
 
  • Toss chicken pieces in corn flour. Shake away excess.
  • Heat oil . Add the chicken pieces and stir fry till golden brown.
  • Add the red pepper and shallots and fry 1min.
  • Add the water, crumbled stock cubes, tomato sauce, sugar and lychees.
  • Mix well and simmer about 7 mins till the chicken is cooked through.
  • Add the extra corn flour mixed in water . Bring to a boil , continue stirring till the sauce thickens.
  • Serve immediately.
 

Tips:

To make this dish spicy, add some red pepper flakes or a dash of chili sauce!
