I saw someone asking for an orange chicken recipe. This is the one I use and we enjoy it a lot. I hope it's close to what your looking for.
Ingredients:
1 cup water
3 tablespoons orange juice
1/2 cup packed brown sugar
2 tablespoons rice (or white) vinegar
1 1/2 tablespoons soy sauce
1 tablespoon lemon juice
2 to 3 teaspoons grated orange zest
1 teaspoon freshly grated ginger
1 teaspoon chopped garlic
1 tablespoon chopped green onion
1/4 teaspoon red pepper flakes
4 teaspoons cornstarch mixed w/an
additional 3 tablespoons water
Chicken and batter:
4 boneless chicken breasts, cut into cubes
1 cup ice water
1 egg
1 teaspoon salt
1 1/2 cup flour
Oil for frying
Sliced green onions and toasted sesame seeds for garnish.
Preparation:
- Marinate chicken in a little garlic/ginger paste, a couple tablespoons of soy sauce, salt and pepper for 1 to 2 hours in the fridge.
- In a small pan, add all sauce ingredients, except cornstarch, bring to a boil and then set aside to cool while preparing chicken.
- Mix water, egg, 1 1/4 cup flour and salt until slightly lumpy. Dredge chicken pieces in remaining flour and dip into batter. Fry 2 to 3 minutes over high heat until golden brown. Take care not to overcook the chicken so it will stay tender. Drain on paper towels. Repeat until all chicken is cooked.
- Reboil sauce again, add cornstarch w/water, stir and cook one minute until thickened. Pour sauce over chicken and toss lightly. Sprinkle with sliced green onion and sesame seeds. Serve w/rice.
