Orange Chicken

I saw someone asking for an orange chicken recipe. This is the one I use and we enjoy it a lot. I hope it's close to what your looking for.

Ingredients:


1 cup water
3 tablespoons orange juice
1/2 cup packed brown sugar
2 tablespoons rice (or white) vinegar
1 1/2 tablespoons soy sauce
1 tablespoon lemon juice
2 to 3 teaspoons grated orange zest
1 teaspoon freshly grated ginger
1 teaspoon chopped garlic
1 tablespoon chopped green onion
1/4 teaspoon red pepper flakes
4 teaspoons cornstarch mixed w/an
additional 3 tablespoons water

Chicken and batter:
4 boneless chicken breasts, cut into cubes
1 cup ice water
1 egg
1 teaspoon salt
1 1/2 cup flour
Oil for frying

Sliced green onions and toasted sesame seeds for garnish.

Preparation:
  • Marinate chicken in a little garlic/ginger paste, a couple tablespoons of soy sauce, salt and pepper for 1 to 2 hours in the fridge.
  • In a small pan, add all sauce ingredients, except cornstarch, bring to a boil and then set aside to cool while preparing chicken.
  • Mix water, egg, 1 1/4 cup flour and salt until slightly lumpy. Dredge chicken pieces in remaining flour and dip into batter. Fry 2 to 3 minutes over high heat until golden brown. Take care not to overcook the chicken so it will stay tender. Drain on paper towels. Repeat until all chicken is cooked.
  • Reboil sauce again, add cornstarch w/water, stir and cook one minute until thickened. Pour sauce over chicken and toss lightly. Sprinkle with sliced green onion and sesame seeds. Serve w/rice.

I'm very sorry!
When I saw this in print, I realized that the ginger in the sauce should be 1/2 teaspoon, not 1 teaspoon. Especially if using a ginger/garlic paste, which is more compacted and concentrated, 2 teaspoons might be overpowering. If using paste, I would put only 1 teaspoon, maybe even 1/2 and taste before adding more. If using fresh, it wouldn't make such a big deal. Again, sorry for that! :upset

Oh-so- good Orange chciken!
Noor, that's a great recipe. Thanks again!sauce was exactly like the one you get in restaurants. But was wondering how the chicken stays crispy cos mine was soft even before i poured the sauce over it.

Hi Damayanti! Yeah, I agree. I considered adding baking powder but thought it would just puff them and not add crunch. If you hear of it or fiddle w/the recipe and find a way, let me know too! :)

To make chicken crispy
In most chinese recipes , u have to add some corn starch while making the batter for the item to be deep fried.Since this recipe calls for 1 & 1/2 cups of flour , I guess we can make it 1 cup flour & 1/2 cup corn starch.Will be giving this recipe a try ...& with soo many chefs working we will hopefully fig. out a way to make it slightly crispy !! BTW, Damayanti, pl. take pics of the orange chicken if u still have any left & send them in!!! :grin

Thanx Noor for this recipe!!Made orange chicken today..it was simply DELICIOUS! I loved the aroma of the orange zest & ginger.For the batter, I added equal parts of flour & corn starch and added the ginger garlic paste to the batter and let the chicken marinate in it for 1/2 hr...just bcoz I was pressed for time.The outcome was Yummmy.Didnt change a thing for the sauce!This one is def. a favorite! I let the chicken sit in the oven on 'warm' to retain crispness. Poured the sauce over just before serving.I've added the picture...hope many more would enjoy this dish.
