Spicy Szechuan Noodles

Noodles tossed in a spicy sauce that can be prepared quickly.

Ingredients:

12 ounces thick noodles

1 cup cooked shredded chicken

2 tbsps roasted cashews

Sauce:

2 spring onions chopped

2 tbsps cilantro chopped

2 garlic cloves chopped

2 tbsps smooth peanut butter

2 tbsps sweet chili sauce

1 tbsp soy sauce

1 / 2 tbsp vinegar

1 tbsp sesame oil

2 tbsps olive oil

2 tbsps chicken broth or water

freshly ground pepper to taste

Preparation:

  • Cook noodles as per package directions. Drain and rinse under cold water. Drain well and set aside.
  • When the noodles are cooking , whisk all ingredients under sauce in a bowl.
  • Heat sauce. Add in the noodles, chicken and roasted cashews. Toss gently to coat evenly and serve at once.

Tips:

Substitute any other meat of your choice instead of chicken.
