Sweet & Sour Vegetables

A quick and colorful vegetable side for a Chinese meal.

Ingredients:
 

1 tbsp oil

salt to taste

1 1/2 cup canned pineapple chunks

1 red or green pepper/ capsicum

1 onion

1 /2 cucumber

2 carrots

 
Sauce:
 

1 /3 cup tomato ketchup

1/ 4 cup pineapple juice (drained from the canned pineapple)

1 tbsp vinegar

1 tbsp soy sauce

4 tsps sugar

1 tbsp corn starch (mixed with water)

3 / 4 cup water

 
Garnish:
 

1 tbsp chopped spring onions

 
 
Preparation:
 
  • Cut all the vegetables into cubes and slice the carrots in circles.
  • Heat oil in a pan.
  • Add vegetables (except cucumber and pineapple) with some salt and fry for a few mins.(the vegetables should be crisp-not over cooked) Remove and set aside.
  • Add all the ingredients under sauce to the pan and bring to a boil.Reduce heat and simmer for about 4 mins.
  • Add the vegetables,cucumber and pineapple chunks to the sauce and boil for 30 secs.
  • Remove from heat immediately.
  • Garnish with spring onions and serve with fried rice.
 
Tips:
 

Add vegetables like broccoli and other stir fry vegetables if preferred.

yummy,its been a long time since i got a great recipe for cutlets ,mutton cutlets was really delicious
