Lemon and Ginger Chicken

Crispy fried chicken slices in a lemon-ginger sauce.




Ingredients:


2 chicken breasts thinly sliced

1 ½ inch piece ginger finely chopped

1 spring onion chopped

2 eggs beaten

2 tbsps oil(to fry ginger)

2 tbsps corn flour

Oil to deep fry

salt

For Sauce:

¼ cup lemon juice

1 tbsp honey

1 cup chicken stock

1 tsp fresh grated ginger

2 tbsp sugar

1 tbsp corn flour (mixed in a little water)



Preparation:

  • Combine eggs , salt and corn flour.Mix well.
  • Add chicken slices to the above mixture and mix well to coat chicken evenly.
  • Heat oil and deep fry the chicken pieces .Do not over crowd the pan.Fry till golden brown and cooked through.Drain on paper towels.
  • Heat the extra oil.
  • Add the chopped ginger and fry a few mins.
  • To this add all the ingredients under ‘sauce’ except the corn flour and bring to a boil.
  • Add the corn flour dissolved in water.Stir and cook till the sauce boils and thickens.
  • Pour sauce over the fried chicken.
  • Garnish with chopped spring onions.



Tips:

Freeze chicken breasts partially and then cut.It is much easier to slice thinly.
