Whole Fish with SweetnSour Sauce

Fried whole fish in a delicious sauce with oriental flavors.

Ingredients:

1 whole fish about 2 ½ lbs – red snapper works well

3 tbsps corn starch

oil for frying

salt

freshly ground pepper

cooked white rice

For Spice Paste:

2 garlic cloves

1 tsp lemon grass extract or 2 lemon grass stems(lower white part only)

1 inch piece ginger

1 /2 tsp galangal powder or 1 inch piece fresh galangal

1 /2 tsp turmeric powder

10 almonds

For Sauce:

1 tbsp brown sugar

3 tbsps vinegar

1½ cups water

3 spring onions sliced

2 onions quartered

3 tomatoes quartered

1 red chili- minced

salt

Preparation:

  • Wash and pat dry the fish.
  • Sprinkle with salt both inside and out and set aside for 15 mins.
  • Grind all the ingredients under “spice paste” and transfer it to a bowl.
  • To it, add the brown sugar,water,vinegar and salt.Mix well.
  • Dust fish with cornstarch.
  • Heat oil in a large pan and fry the fish on both sides till well cooked.Drain fish on paper towels and transfer to a serving platter..
  • Pour out excess oil and add the spicy liquid to the pan.Bring to a boil.
  • Reduce heat and let it simmer for 5 mins.
  • Add the spring onions, tomatoes, onions, salt and chili.
  • Taste and adjust seasoning.
  • Pour sauce over the fish and serve immediately with white rice.

Tips:

1. Use any whole fish you desire.Make a few slits on the sides with a sharp knife .

2. You can find galangal, lemon grass etc. in any Chinese store.
