A delicious and satisfying soup that can be prepared in no time.Bok choi is a popular Chinese vegetable that belongs to the cabbage family - it has a light, sweet flavor with a crisp texture.Works great for soups and stir fries.

Ingredients:

15 baby bok choi / choy

2 - 14 oz cans chicken or vegetable broth

1 - 15 oz can - cream style sweet corn

1 /2 cup water

1 tsp fresh minced garlic

1 tsp oil

salt to taste

freshly ground black pepper



Preparation:

  • Heat some oil in a pressure cooker.
  • Add in the minced garlic and fry till golden brown.
  • Add the bok choi and stir around.
  • Add the broth, water and corn .
  • Season with salt & pepper and stir well.
  • Pressure cook for 5 mins.Till the vegetable is cooked.
  • Healthy soup is ready!


Tips:

1. The base of the bok choi may have some soil, so cut off the lower part of the base and pull apart all the leaves and rinse thoroughly -so there is no trapped dirt.

2. Wrap bok choi with paper towels and store in the ‘crisper’ drawer of your refrigerator.

3. Bok choi is high in Vitamin A, Vitamin C and calcium, but it is low in calories.
