SWEET AND SOUR PRAWNS/SHRIMP

A quick and simple recipe in which the Prawns are cooked in a bright orange sweet and sour tomato based sauce with onions,green peppers,cucumbers and pineapple.Goes well with vegetable noodles or fried rice.

Ingredients:

1 lb prawn/shrimp

200 gms pineapple

200 gms cucumber

200 gms tomato

200 gms onion

200 gms green pepper/capsicum

Sauce:

200 ml chicken stock

2 tbsp dry sherry or rice wine

7 tbsp tomato sauce

2 1/2 tbsp vinegar

2 1/2 tbsp sugar

4 tbsp corn starch (dissolved in a little chicken stock)

Preparation:

  • Cut all the vegetables into cubes.
  • Dust prawns with cornflour and set aside.
  • Heat oil in a pan and fry prawns/shrimp for 3 mins.
  • Remove and drain them in paper towels.
  • Add the vegetables to the pan and fry for a few mins.Remove and set aside.
  • Mix all ingredients for the sauce together and bring to a boil.Then simmer for 4 mins.
  • Add the prawns/shrimp and vegetables to this and boil for 30 secs.
  • The ‘sweet and sour prawns’ are ready to enjoy!

Tips:

Fresh prawns are preferred for this recipe, but if using frozen prawns-"FROZEN UNCOOKED" is preferred.
