Tuna Fish Noodles

Egg noodles tossed with canned tuna and vegetables .The perfect healthy, delicious “all in one meal”.This was one of our favorite dinners that mom made growing up and my kids enjoy it now !

Ingredients
:

10 oz thin egg noodles

2 tbsps oil

2 – 6 oz cans tuna (use 1 can if you don’t want a strong tuna flavor)

1 bunch spring onions chopped (reserve 2 tbsps for garnish)

1 ½ cups fresh or frozen carrots(match stick cut preferred)

1 ½ cups fresh or frozen French cut green beans

1 green pepper/capsicum sliced thin

1 cup fresh or frozen green peas (optional)

3 tbsps soy sauce mixed with ¼ tsp sugar (Add more or less according to taste)

freshly ground black pepper

salt to taste

Preparation:

  • Cook egg noodles as per instructions. Drain and set aside.
  • Heat oil.
  • Add the vegetables with salt and pepper. Cover and let it cook till cooked but a little crunchy.
  • Drain the canned tuna and mix along with vegetables.
  • Toss in the noodles.
  • Drizzle soy sauce all over and mix well.
  • Garnish with spring onions and serve hot.

Tips:

1. You can find match stick cut carrots in the ‘salad vegetables’ section of your grocery store.Frozen vegetables are very convenient & are as healthy as fresh ones.

2. Add soy sauce SLOWLY – Use eyes and your own judgment since some sauces are light and others more concentrated.
