Vegetable Fried Rice

Long grain rice tossed with a colorful variety of vegetables and scrambled eggs.

Ingredients:

2 cups long grain rice or basmati cooked (rice cooked the previous day & refrigerated preferred)

3 /4 cup carrot cut

1 /2 cup peas

1 /2 cup green beans cut

3 /4 cup broccoli florets

3/ 4 cup red & green pepper cut

1 1/2 tsp minced garlic

3 tbsps soy sauce

1 pinch ajinomoto

salt to taste

ground black pepper to taste

3 tbsps oil

2 eggs beaten

2 spring onions chopped (for garnish)

Preparation:

  • Heat oil and scramble eggs. Set aside.
  • Heat some more oil. Add the vegetables, sprinkle salt and pepper and cook till the vegetables are 3 /4 th done.
  • Add the soy sauce and ajinomoto. Mix well.
  • Add in the cooked rice and scrambled eggs. Stir around, till the rice is evenly coated.Check seasoning.
  • Serve hot garnished with spring onions.

Tips:

1. This is a good recipe when you have left over rice.

2. For quick fried rice - Use 2 cups of frozen vegetables (oriental or stir fry mix) instead of fresh veggies.

3. Add chicken or any other meat if desired.

4. I like to add 2 tbsps "oyster sauce" to the above recipe for a nice flavor.

Alas! Someone else who makes their fried rice with basmati rice! My DH won't eat it any other way! May I also suggest to your great recipe a small, diced onion, sauteed briefly, then add a couple teaspoons fresh minced garlic and grated ginger and also a few cups of shredded cabbage, sauteed a couple of minutes until it wilts, you can add with it with the carrot. And try a tablespoon of sweet soy sauce along with the regular soy if you have it. I love fried rice, you can throw in the kitchen sink and it tastes awesome. :)

Great additions
Noor, your additions to the fried rice sound wonderful.I've tried it with the ginger and garlic , but the "sweet soy sauce" is a 1st timer!Do u get sweet soy sauce at the store or do u just add in some sugar? Pl. enlighten me!!!

Great additions
Sweet soy sauce is a product that I am sure you can find in any Asian market. I live in the middle east where it available in the local grocery store. It's basically as it says, soy sauce with sugar! Very tasty added to fried rice or any stir fry. It's very similar to oyster sauce.
