Whole fish simmered in a delicious sauce. The sauce can be put together very quickly and goes well with white rice.
1 whole fish gutted and cleaned (1 ½ lbs – 1 tbsp soy sauce oil for deep frying For Sauce: 3 spring onions chopped 2 cloves garlic finely chopped 1 tsp fresh ginger finely chopped 3 tbsps black bean sauce (plain or with chili or garlic) 4 tbsps tomato sauce 1 tbsp chili sauce 1 ½ - 2 tsps brown sugar 1 tbsp vinegar 1 /2 cup water 1 tbsp cornstarch (mixed with water) 1 tbsp oil Preparation:
