Whole Fish in Garlic Chili sauce

Whole fish simmered in a delicious sauce. The sauce can be put together very quickly and goes well with white rice.

Ingredients:

1 whole fish gutted and cleaned (1 ½ lbs –Tilapia, trout, red snapper etc. work well)

1 tbsp soy sauce

oil for deep frying

For Sauce:

3 spring onions chopped

2 cloves garlic finely chopped

1 tsp fresh ginger finely chopped

3 tbsps black bean sauce (plain or with chili or garlic)

4 tbsps tomato sauce

1 tbsp chili sauce

1 ½ - 2 tsps brown sugar

1 tbsp vinegar

1 /2 cup water

1 tbsp cornstarch (mixed with water)

1 tbsp oil

Preparation:

  • Rinse fish and pat dry with paper towels .Make diagonal slits on the sides with a sharp knife all the way till the bone.
  • Rub fish with soy sauce and set aside for 15 mins.
  • Heat oil in a wide flat pan or wok.
  • Deep fry the fish on both sides till brown and set aside.
  • Pour off excess oil. Add the spring onions (white part) ,garlic and ginger and fry a few mins.
  • Add all the remaining ingredients under “sauce” (except the corn starch).
  • Bring to a boil. Reduce the heat and add in the corn starch mixed with water.
  • Add in the fish and simmer for 5 mins turning it once.
  • Serve immediately garnished with spring onions.

Tips:

1. Use any fish you prefer. You can make the same dish with fish filets.

2. Bean sauce can be found easily in any Chinese /Asian store.
