Cheese Ravioli with vegetables

Cheese ravioli tossed with fesh vegetables and kicked up pasta sauce.

Ingredients:

13 Oz Cheese Ravioli, cooked according to package directions
12 Mushrooms sliced thick
1/2 Red Bell Pepper cut into thin strips
1/2 Zucchini sliced in half moons
2 cloves Garlic, chopped
1/3 cup black Olives, sliced
1 Cup Chicken Broth
2 Tbsp Olive oil
1/4 Tsp crushed Red Pepper flakes
1/2 Cup Pasta Sauce
Parmesan Cheese to garnish
Salt to taste
Black pepper to taste

Preparation:
  • Heat olive oil in a saucepan and add chopped garlic. Saute for few seconds.
  • Add red bell pepper strips, zucchini and mushrooms.
  • Cook for few minutes and add olives, red pepper flakes and salt. Saute a little.
  • Add chicken broth and boil for few minutes.
  • Add pasta sauce and let sauce simmer for about 5 minutes.
  • Add cooked ravioli and mix gently.
  • Place the cooked ravioli on a serving plate and pour sauce along with vegetables and top with parmesan cheese.
