Mushroom and Cheese Phyllo Shells

Yummy crunchy appetizer with cheese and mushroom.

Ingredients:

15 Athens Mini Fillo Shells (1 box)
1 Cup chopped Baby Bella/Portabella Mushrooms
1/3 Cup chopped Red Bell Pepper
3 Spring Onion (white part chopped)
1 Jalapeno chopped
1 clove Garlic chopped
2 Tbsp Feta Cheese
1 Tbsp Parmesan Cheese
1/3 Cup Mozzarella Cheese
2 Tsp Oil
Salt to taste



Preparation:
  • Preheat oven to 350 degree F.
  • Heat oil in a skillet. Add chopped garlic. Saute for few seconds.
  • Add chopped spring onion and jalapeno. Saute for 1 minute.
  • Add mushrooms and red bell pepper. Saute for few minutes. Add salt and mix.
  • The mixture should be completely dry.
  • Remove from heat.
  • Stir in Parmesan cheese, mozzarella cheese and feta cheese.
  • Spoon 1 rounded teaspoon of filling into each Fillo Shell. Bake for 8-10 minutes. Serve warm.
