Rotini Pasta with Vegetables

Rotini pasta with crisp vegetables and sauce.

Ingredients:

2 Tbsp Extra Virgin Olive Oil
2 cloves Garlic
1 small Green Pepper cut into strips
1 small Red Pepper cut into strips
10 white Mushrooms cut quartered
10 Baby Bella Mushrooms quartered
2 Tsp Capers(optional)
2 small sticks Celery cut into pieces
1/4 Tsp Crushed Red Pepper
2 Cups Pasta Sauce
2 Cups Rotini Pasta
Salt to taste



Preparation:
  • Cook pasta according to package directions. Drain and keep aside.
  • Heat oil in a large skillet over medium heat.
  • Add crushed red pepper and  garlic saute few seconds.
  • Add vegetables and cook for 10 minutes in high flame.
  • Add salt and pasta sauce.Cook for 3 minutes in medium flame.
  • To this add drained pasta and mix.

Tips:
  • Vegetables should be crisp.It should not be over cooked.
  • For different taste add 1/4 cup of heavy cream along with pasta sauce.
  • Rotini can be replaced with ziti or penne pasta.
