This mango salsa is colorful, fresh and fruity and goes very well with fish.
Ingredients: 1 large mango – peeled and cut into cubes(the mangoes should be ripe & firm, but not over ripe) 2 tbsps red onion – finely chopped 1 jalapeno pepper finely chopped (remove seeds & veins) 1 - 2 tbsps lemon juice ( add more or less according to taste) 3 tbsps chopped fresh coriander/ cilantro leaves salt to taste freshly ground black pepper to taste 1 tsp olive oil (optional)
Preparation:
Add diced cucumber, finely chopped red bell pepper etc. if desired.
