Vegetable Fajita

Ingredients:

4 Flour tortillas
2 cloves garlic chopped
1 small yellow onion sliced
6 oz white mushrooms/baby bella cut into quaters
1/2 green bell peppers sliced
1/2 red bell peppers sliced
1/2 yellow bell pepper sliced
1 can black beans drained
1 tbsp taco seasoning or fajita seasoning
1 1/2 tsp oil
Salt to taste
Guacamole


Preparation:


Heat oil in a pan. Add garlic & saute for few seconds.
Add onion, bell peppers, mushrooms & salt.
Saute for 4-5 minutes in high flame.
Reduce heat to medium & add seasoning mix & black beans.
Mix well.
Warm the tortilla in a pan.
Place the tortilla in a serving plate, spread 1 1/2 tsp of guacamole evenly.
Spoon some veggie mix inside & roll it up.
Serve hot with sour cream & guacamole on the side.


Tips:

The vegetables should be crisp,not soft.
Chicken strips can be added instead of vegetables.
Instead of guacamole, you can spread sourcream on the tortilla.
