I had the Almond crusted Tilapia at a restaurant,it tasted heavenly,one of the best fish preparations I have ever had….I had to figure out a way to get the same taste at home!After some researching, I settled down with this recipe.Tastes just like the restaurant's, a sure hit with my family.

Ingredients:
3/4 cup plain, dry bread crumbs
3/4 cup almonds or your favorite nut-grind coarsely in a processor/blender
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 egg beaten or maida mixed with a little water
1/2 cup flour
4 tilapia fillets or fish of your choice
2 tablespoons oil/butter
Preparation:
- Wash the fillets and pat them dry with paper towels. Sprinkle some salt over them.
- Combine bread crumbs, almonds, salt and black pepper in a shallow dish.
- Pour beaten eggs or corn flour mixed with water in another shallow dish.
- Pour flour on a flat tray.
- Dredge the fillets in the flour, then dip them in the egg or corn flour- water mixture.
- Coat fillets with the almond mixture and press well. Place the fillets on a plate sprinkled with the almond mixture and chill in the refrigerator for about 30 minutes for the almond crust to set.
- Heat one tablespoon of oil/butter in a pan .
- Add fillets, cook them for about three minutes on each side until they are browned and the fish is cooked.Be sure not to over crowd the pan.
- Serve with Raspberry sauce
Tips:
- When making the almond,bread crumb mixture, make extra so you can store them in a box or in Ziploc bags for use at a later date.Saves a bunch of time.
- Use any other fish you prefer, red snapper fillets work well in this recipe.
