Baked Potato

A dish which can either be served as a main dish by itself with delicious add-ons, or as a side with creamy tomato soup, garlic bread and grilled chicken!!!

Ingredients:


Baking potatoes (Idaho potatoes work great) - 4 nos. w/uniform shape & size to ensure even cooking
Salt- to taste
Olive oil- approx. 1 Tbsp. per potato


For the add-ons:

Scallions - 4 finely chopped
Pepper to taste
Salt to taste
Sour Cream - approx. 2 Tbsp. per potato

Preparation:

  • Wash the potatoes thoroughly.
  • Using a fork or a sharp knife pierce the potato 4 times on each side at 1" intervals.
  • Sprinkle the salt and drizzle the olive oil over the potatoes. Make sure the skins are well coated.
  • Individually wrap the potatoes in aluminum foil.
  • Arrange on baking tray and Bake in 375 degree pre-heated oven for approx 45 minutes.
  • To check if potatoes are Perfectly baked gently press them in the middle either with a clean kitchen towel or a mitt. When done the potatoes will be soft and the oven will smell of yummy potatoes!!!
  • If the potatoes are still hard when you gently press them , pop them back in the oven for a few more minutes until the middle is soft. Baking times depend on each oven.
  • When you are ready to eat, discard the aluminium foil cover, split the potato skin with a knife. Sprinkle some salt and pepper, top with a dollop of sour cream and chopped scallions.
  • The potato will be light, flaky and creamy. In combination with the sour cream & scallions it will be a potato lover's dream come true!!!

Perfect potato!
Hasna, I made ur baked potatoes last night.Its was soooo easy & delicious.We ate it with butter,sour cream & scallions!!Yummy.I did not cover them in foil and the skin was crisp & delicious!!!Baked them at 400 F for 1 hr 15 mins.Thank u for this super easy & healthy recipe...minus the butter ofcourse!!! :grin
