Chicken with Creamy Garlic Sauce

Chicken breasts served with a smooth and creamy garlic sauce.

Ingredients:

3 tbps butter
3 chicken breasts, butterflied
1 small bunch spring onions sliced
1 zucchini, sliced
salt to taste

Creamy Garlic Sauce :

3 tablespoons butter
3 cloves garlic - minced
3 tablespoons flour
1 (3 oz) package of cream cheese
1 can chicken broth
Pepper to taste


Preparation:
  • Melt butter in a large skillet.
  • Add chicken breasts.Season with salt and cook both sides till browned and cooked through .
  • Add zucchini and spring onions and cook till vegetables are crisp but cooked.

Creamy Garlic Sauce:
  • Melt 3 tbsps butter in a saucepan.
  • Add garlic and cook a min.
  • Add the flour and stir with whisk till smooth and bubbly.
  • Add the broth, cream cheese and pepper and cook till sauce is creamy and smooth.
  • Tranfer chicken and vegetables to a platter and pour the cream sauce over.Serve this dish with pasta, garlic bread etc.
Tips:

To butterfly a chicken breast, lay it flat and run the knife horizontally through the middle of the chicken breast.Stop 1 /4 inch from the other side so it will open out to look like the wings of a butterfly.Butterflied meats will cook faster and more evenly.

When seasoning the chicken, just a little bit of salt will do - since the cream cheese and broth in the sauce have a lot of salt in them.

Add vegetables like carrots, mushroom etc. if desired.
