To butterfly a chicken breast, lay it flat and run the knife horizontally through the middle of the chicken breast.Stop 1 /4 inch from the other side so it will open out to look like the wings of a butterfly.Butterflied meats will cook faster and more evenly. When seasoning the chicken, just a little bit of salt will do - since the cream cheese and broth in the sauce have a lot of salt in them. Add vegetables like carrots, mushroom etc. if desired.
