Salmon - Potato Cakes

I found this simple and flavorful salmon recipe in a magazine.

Ingredients:
 

14 oz skinless salmon fillets

2 cups refrigerated sour cream and chive mashed potatoes

1 / 2 cup seasoned dry bread crumbs

3 tbsp fresh dill

Non stick cooking spray

5 oz pkg. Mixed salad greens

1/ 2 cup Honey - Dijon salad dressing

 
 
Preparation:
 
  • Rinse and pat dry the salmon.
  • Place in a microwave safe bowl. Cover with vented plastic and cook on high setting for 3 1/2 mins. The salmon should flake easily.Break the salmon into small pieces with a fork.
  • Combine the salmon, potato, bread crumbs and dill.
  • Form 8 cakes.
  • Heat non stick pan.Apply cooking spray and cook the salmon cakes on medium heat for 4 mins on each side - till heated through and browned.
  • Place salad greens on a plate. Top with the salmon potato cakes and serve with the dressing.
